Snow Day Winter Spice Pancakes

We just got our first big snowstorm of the season today. So I felt it was the perfect time to make my favorite breakfast food, pancakes. But these are no ordinary pancakes. A few years ago I added a few spices into the pancakes, but never really perfected the recipe till just recently. I’ve made these twice now and they’re like eating all the best spices that winter foods have to offer, topped with butter and syrup.

This recipe makes about 7 large pancakes, but it all depends on the amount of batter you pour for each one. If you like smaller pancakes, you should be able to make about 10-12. If there are any leftovers, you can put them into a freezer bag and keep in the freezer.

My favorite way to eat these is with lots of butter and maple syrup, but jam or jelly go nicely as well. I’ve even added chocolate chips into the pancakes when I cook them, and the kids love it. I may also have added in cooked bacon pieces too. Which I loved.

My family loves these whenever I make them, and it always gets us into a cozy winter mood. I’ve never made pancakes from a box because these ones are so easy to make, and relatively cheap on the budget. Ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1 beaten egg
  • 1 cup milk
  • 2 tablespoons cooking oil
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the dry ingredients into a medium bowl. Make a well in the middle of the mixture.
  2. Combine all the wet ingredients in a separate bowl.
  3. Add the wet ingredients to the dry ingredients. Stir everything together till the dry ingredients have been incorporated. There should still be a few lumps in the mix, but they will be small. You really just need to make sure there are no large clumps of flour that haven’t been incorporated.
  4. Let the batter sit for about 5 minutes before cooking. I use a griddle plate on my stove for cooking them, but a skillet or frying pan will also work nicely. I use an olive oil cooking spray so the batter won’t stick to the pan. Butter works too.
  5. Heat the pan for a few minutes before you start to cook. When it’s hot, pour the batter onto the cooking surface you have chosen and cook on medium heat until small bubbles form on the top of the pancake.
  6. Carefully flip the pancake over and cook on the other side for a few minutes. It only takes a couple of minutes for the pancake to cook completely. You might want to flip it a few times to make sure it has the golden color you desire.
