One of my favorite Christmas movies is "The Holiday" with Kate Winslet. On Christmas Eve, Kate makes Christmas Fettuccine for her and Jack Black. I always thought that was a fun thing to eat on such a festive night.

After years of spending Christmas eve with loads of people, I now have a quiet night to myself (till the kids get home anyway). I love this time, to relax, to unwind, to finish the crafty things I've cooked up for my family. So this year, I cooked up my own Christmas Fettuccine recipe.

If you're on your own, or celebrating with friends, Merry Christmas. And if you feel like having pasta, try out my recipe. It's comforting, warm and very flavorful.

Ingredients

  • 8 oz. Fettuccine noodles
  • 2 tablespoons unsalted butter
  • 1 1/2 cup heavy cream
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 1/2 cup spinach (frozen or fresh)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1 cup fresh parmesan, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the fettuccine noodles according to instructions on box. Drain.
  2. To make the sauce, warm the butter and the cream in a frying pan over low heat.
  3. Whisk in the flour.
  4. Add the spinach and herbs, whisking to combine. If using frozen spinach, defrost it in the microwave. Once unfrozen, put the spinach in a paper towel and squeeze all the water out. Then add to the sauce.
  5. Add the parmesan cheese and stir till the cheese has melted. Try to use freshly grated parmesan if possible, as this will melt better than the pre-grated parmesan from the store. But if that's all you have on hand, it will work fine. It just might not melt as finely.
  6. Add salt and pepper, stirring to combine.
  7. Add the fettuccine noodles into the sauce and stir to coat the noodles in the sauce.
  8. Serve and enjoy.
