Balsamic Onions, Garlic & Cheese Omelette

On Sundays I try to get a little fancy with breakfast, especially if I’m only cooking for myself. As I listened to the fierce wind outside from the warmth of my bed, I decided I wanted to try my hand at a really tasty omelette.

This omelette is pretty simple. It’s made like a normal omelette, with eggs, water, salt and pepper. What makes it fancy is the filling. I cooked some onions and garlic in a small pan, then mixed it with some balsamic vinegar. Add some sharp cheddar cheese, and you have one tasty treat. I almost added spinach too, but realized I didn’t have any.

This recipe makes one omelette and cooks up quickly.

Ingredients

  • 2 eggs, beaten
  • 1 tablespoon water
  • 1/4-1/3 cup grated cheddar cheese (or whatever cheese is on hand)
  • 1/8 teaspoon salt
  • A pinch of pepper
  • 1/4 teaspoon thyme
  • 1 teaspoon garlic
  • 1/2 of a small onion, diced
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon olive oil

Instructions

    1. Sauté the onions and garlic with the olive oil in a small pan over medium heat, stirring occasionally. Cook until the onions are tender, about 5 minutes. Remove from heat and add the balsamic vinegar to the pan. Stir and set aside.
    2. Combine the eggs, water, salt, pepper and thyme in a medium bowl, beating all ingredients together.
    3. Spray a frying pan with nonstick spray. Heat the pan over medium heat. Add the eggs to the pan, making sure the mixture spreads out into a thin layer. Lift the edges of the eggs with a spatula as they set, moving the uncooked eggs underneath. This will help cook all the eggs quickly. Don’t get too discouraged if this step gets tricky. I didn’t have to move my eggs much to cook them through. It all depends on the amount of heat you’re using.
    4. Once the eggs have set, add the grated cheese on top of the omelette, covering the entire surface.
    5. Add the onion and garlic mixture on half of the omelette.
    6. Fold over the omelette to cover the filling. Let it sit in the pan for about a minute to let the cheese and onion filling combine.
    7. Remove from pan and serve.
